Brad Kilgore's Itameshi restaurant at the base of the Transamerica Pyramid — Italian-Japanese fusion that doesn't lean on novelty so much as conviction, with pasta techniques rerouted through Japanese ingredients and Japanese restraint applied to Italian generosity. The room is sleek and modern, the menu reads tight, and the cooking justifies the geometry. One of SF's more exciting recent openings.
