José Andrés's whole-animal Spanish steakhouse reopened at The Palazzo in September 2025 in a new 20,000-square-foot space with Frank Medina back as executive chef — Medina was on the original 2014 SAHARA opening team and returned to lead the Palazzo relaunch. The kitchen runs theatrical live-fire across whole-animal service: suckling pig, dry-aged cuts, A5 wagyu, plus the playful Andrés ThinkFoodGroup touches (Sphere graffiti chocolate dome, cotton-candy foie). Central open-fire kitchen visible from every seat. For the largest Spanish-influenced live-fire dining room in Vegas — and one of the country's most decorated.
