Chris Santos's Beauty & Essex opened at The Cosmopolitan in May 2016 — the same NYC-import that built Santos's scene-defining Lower East Side template, now run inside Tao Group's Vegas operation. The pawnshop-entry foyer is the editorial signal: guests pass through a working antique shop to reach the lipstick-pink dining room beyond. The kitchen runs shareable Mediterranean / new-American small plates with Santos's signature program markers (oyster shooters, smoked salmon flatbread, grilled cheese with tomato soup shooters). The room is the program: theatrical service, designed-photogenic, scene-leaning but with a kitchen that earns the placement. For Cosmopolitan's most-theatrical dining room where the design conceit IS the editorial work.
