Major Food Group's Aria Carbone has been Jonah Resnick's room since the October 2015 opening — Resnick rose through Daniel Boulud's flagship in Manhattan to MFG's corporate-chef role before leading the Vegas opening. Tuxedoed captains, mid-century Italian-American homage, the spicy rigatoni vodka and veal parmesan that built MFG's signature cookbook. The room reads as set design: red leather, white tablecloths, period-faithful Italian-American supper-club register. For the Vegas room that turned MFG's NYC original into a global brand.
