Alan Yau (founder of Hakkasan and Wagamama) conceived Chyna Club at Fontainebleau in 2024 with Richard Chen as Executive Chef — Chen earned his Michelin star at Wing Lei (Wynn) during the Las Vegas Michelin Guide's 2008-2009 run before moving through Boston (Encore Harbor's Red 8) and back to Vegas for the Chyna Club seat. The Peking Duck tasting menu anchors the program; the Art Deco-meets-East-Asia room template (red-room study, dark wood) is Yau's brand-signature carried over from his London concepts. The name is misleading: this is a chef-driven Cantonese dining room with serious pedigree, not a themed club. For Fontainebleau's most-credentialed Chinese fine-dining room — running at Wing Lei-tier chef credential under Chen.
