Founder and CEO Simon Kim opened the first West Coast COTE at The Venetian's Waterfall Atrium on October 4, 2025 — Portfolio Executive Chef David Shim has run the COTE kitchen since 2017 and led the NYC flagship to its Michelin star before adding Miami, Singapore, and now Vegas. The format is the brand DNA: Korean steakhouse with tableside grilling, a deep banchan progression, and the Butcher's Feast tasting menu carrying over intact. The Waterfall Atrium room is the brand's most-dramatic setting yet — distinct from the NYC original and the Miami sibling in scale. For COTE's first West Coast outpost, running at the brand's flagship-tier credential.
