Enrique Olvera's LA outpost feels less like a satellite of Pujol than a confident statement that modern Mexican food belongs anywhere it wants to be. The aguachile sings, the tlayuda is the platonic ideal, and the room — warm wood, soft light, a tucked-back bar — is one of the most beautifully designed spaces in the Arts District. Reservations move fast; the bar takes walk-ins.
