Brian Kim opened DOMODOMO on West Houston Street in 2015 as Manhattan's first dedicated handroll bar — a blonde-wood counter in a minimalist underground room that seats around ninety, anchored by Kim's signature "Domokase" handroll-led tasting. Michelin awarded the Bib Gourmand in 2017 and held it seven consecutive years through 2023 before dropping the listing in 2024; the room remains Michelin Guide-listed, and the handroll-first program that earned the run is unchanged. Kim is a CIA graduate with twenty-plus years training under Japanese artisans; the menu now extends beyond temaki into broader Japanese with Korean inflection. The DOMO Hospitality Group has since expanded to Jersey City, Dallas, and Ewa Beach (November 2025), with West Houston as the flagship. For accessible handroll-led Japanese with the format's longest credentialed run in NYC.
