Patrick Munster has run Don's Prime since the Fontainebleau December 2023 opening — Eater LV 2022 Chef of the Year, ex-Eiffel Tower at Paris LV, ex-CDC under David Walzog at SW Steakhouse at Wynn. Named "Best New Steakhouse" by Eater Las Vegas in 2024; the kitchen runs classic American steakhouse with the Snake River Farms tomahawk as the signature cut. The room is named for Jeffrey Soffer's late father; finished old-school steakhouse with Fontainebleau's polished resort frame.
