Daniel Humm and Will Guidara bought Eleven Madison Park from Danny Meyer in 2011, and Humm has run it since as chef-owner at 11 Madison Avenue, in Bertram Goodhue's 1909 Met Life North tower facing Madison Square Park. Three Michelin stars continuously since 2012 — 14 years held through both the 2021 fully plant-based reopening and the October 2025 reformation that reintroduced fish and meat (including the signature honey-lavender-glazed duck) alongside a still-offered all-vegetable tasting. World's 50 Best Restaurants #1 in 2017, now in its Best of the Best Hall of Fame; dual NYT 4-star reviews (Bruni 2009, Wells 2015); Relais & Châteaux Grand Chef since 2008; Humm's own JBF Outstanding Chef 2012. The current program runs a 7-course $385 tasting in two registers — plant-based or meat-inclusive — plus a $225 abbreviated tasting at Clemente Bar (opened October 2024), with the Magic Farms exclusive produce partnership the foundation regardless of menu format. EMP's credentials are Humm's own — he's owner-chef on his own restaurant since 2011, the same chef-owner pattern that runs through Per Se under Thomas Keller. No Michelin Green Star despite the plant-based history. For NYC's most-decorated American haute fine-dining institution, three stars through two format reformations in five years.
