Masa Ito and Kevin Kim brought their Sushi Nakazawa-era discipline from New York to a twelve-seat counter hidden behind a discrete door inside the members-only Poodle Room on Fontainebleau's sixty-seventh floor. The fish flies in from Japan daily; the eighteen-course $400 omakase is the format. The counter format runs traditional Edomae but the setting — hidden-counter-inside-private-club, sweeping sixty-seventh-floor views — is Vegas-specific.
