Norwegian-British owner Alexandra Tangen opened Kabin on Spring Street in June 2024 as a celebration of modern Nordic identity — hytte (cabin) hospitality philosophy, sauna-inspired banquette in hot-rolled steel, Scandinavian imported lighting. The cocktail program was built by Pamela Wiznitzer (ex-Dead Rabbit, USBG NY past president) and Eloy Pacheco around aquavit as a serious base spirit — drinks like Kolio (aquavit blonde-cousin-of-a-martini), Free Healthcare (aquavit penicillin), and Northern Lights — in a city where aquavit is usually a novelty pour rather than a program anchor. Time Out named Kabin to its 35 Best Bars NYC list (May 2026); The Pinnacle Guide adopted it into the Pinned tracked set. Light Nordic snacks (Norwegian waffles, Hasselback potatoes, Danish hot dog) support the bar program.
