The Cherry Creek outpost of the Le Colonial chain — opened November 2024 in a 6,000-square-foot space at 255 Fillmore Street, running the chain's signature French-Vietnamese menu under executive chef Phong Nguyen. The cooking treats Vietnamese family traditions with classical French technique: shaking beef (Bo Luc Lac), crispy egg noodles with shiitake and tofu, lemongrass-marinated dishes. The room channels the chain's signature design-forward Saigon-1920s aesthetic — custom brass handles, French silk lighting, transporting atmospheric production. The Denver expansion comes from restaurateurs Rick Wahlstedt and Joe King, who also brought Le Bilboquet to Cherry Creek in 2019.
