Hogsalt Hospitality (Brendan Sodikoff, the Chicago group behind Au Cheval and Bavette's) took over Monkey Bar at Hotel Elysée and runs it now as an equal-parts steakhouse and cocktail-bar hybrid — Snake River Farms Prime steaks alongside a $34 house martini that's become a signature in its own right. The 1936 Midtown room runs red leather booths and literary murals in dim wood; Ryan Sutton's February 2025 review at The Lo Times opened with "I like it here. I always have." Hotel Elysée began an 18-month renovation in March 2026 (reopening Fall 2026 for its 100th year), but Monkey Bar has stayed open through the work as a standalone. Hogsalt operates a corporate-brand model where individual attribution is intentionally downplayed; the room itself does the editorial work.
