Dave Beran's compact Santa Monica bistro reads like a love letter to Paris — pressed duck carved tableside, escargot under garlic-parsley butter, a dessert cart that arrives without ceremony and dismantles your resistance. The room is small, the service is warm, and the technique is the kind you'd expect from a chef who spent a decade at Alinea. A serious meal that doesn't take itself seriously.
