Chris Bianco's Heritage Square pizzeria — the restaurant that put Phoenix on the national dining map. Bianco was the first chef in Arizona to win a James Beard Award (Best Chef Southwest 2003), and Pizzeria Bianco won James Beard Outstanding Restaurant the same year — the first pizzeria ever to win that award. Bianco picked up Outstanding Restaurateur honors in 2022. The pies are blistered in a wood-fired oven, the dough proofed for days, the toppings restrained — Wiseguy (smoked mozzarella, fennel sausage, red onion) and Rosa (rosemary, pistachio, parmesan) are the pilgrimage orders. The room is a converted Heritage Square brick storefront, intimate and unfussy, with wait times that still stretch into hours on busy nights. For the institutional Phoenix pizza pilgrimage from the chef who defined modern American pizza.
