Sean Griffin has run PRIME at Bellagio as Executive Chef since at least 2012 — a StarChefs Rising Star with prior roles at Neros (Caesars Palace) and EC at Bourbon Steak Scottsdale under Michael Mina from 2007 to 2009 — and continued through the 2025 Jean-Georges Vongerichten redesign that brought the room into its new era. The dining room is now Saint Laurent marble and glass with the Fountains view intact; the program runs Vongerichten's signature steakhouse spec with Griffin's longtime Bellagio kitchen executing.
