Scarpetta is the LDV Hospitality flagship of a global Italian brand born in the Meatpacking District in 2008, now ensconced in a Thomas Juul-Hansen-designed ground-floor dining room at Hotel Seville NoMad (the former James Hotel, rebranded to Hyatt's Unbound Collection in April 2025). Executive chef Jorge Espinoza has run the kitchen since the original opening — moved with the brand to NoMad in 2018, signature dishes intact: spaghetti with tomato and basil and garlic, creamy polenta with truffled mushrooms, yellowtail crudo. Founder Scott Conant departed the brand in 2014; what remains is the recipe book and a polished hotel-restaurant interpretation of his greatest hits, supported by Vegas / London / Doha / Tokyo / Madrid LDV siblings. For Scarpetta's signature canon executed by the chef who's been running it since day one.
