From the Editor

Richard Sandoval and chef Jonatán Gómez Luna Torres — the latter holds Michelin stars at Le Chique in Cancún — opened tán on East 49th Street in December 2022 as a Tulum-and-Yucatán transposition to Midtown East, with a 139-seat Peter Bowden-designed room and an attached mezcal speakeasy "lúm." The kitchen runs Yucatec specifics: jumbo prawns a la diabla, red snapper ceviche, adobo octopus with garlic purée — coastal Mexican cooking rather than the taqueria or Cal-Mex registers more common in NYC. Gómez Luna's stars belong to Le Chique — the credentials are his own, not transferred to tán — and the editorial substance here is concept singularity: there is no other Yucatec-coastal-Mexican room in this catalog. Cuisine-specificity-as-substance register parallel to The Newsroom's LIC speakeasy specificity and Republica's Inwood Dominican anchor — geographic and cultural distinctness earn LP-tier inclusion alongside credential-anchored rooms. For Sandoval and Gómez Luna's Yucatec-coastal Mexican in Midtown East.
