Dai Matsuda has run the kitchen at The Mayfair Supper Club since the NYE 2019 opening — Bellagio Executive Chef Wes Holton oversees the property-level program above him, and Warren Richards came in as Executive Director of Food & Beverage for the 2026 reimagining that brought new entertainment direction and a planned NYE show. The room is the Fountains-view dining-and-show format Bellagio built around the modern supper club register: live performance woven into the meal pacing rather than added as an after-dinner act. The kitchen runs modern American with theatrical touches (Wagyu wonton, caviar frites, tableside service moments).
