The Vault is Bellagio's 1,700-square-foot hidden bar built into the former player cage behind the casino floor — Craig Schoettler, MGM Resorts' Executive Director of Beverage, oversees the program from his corporate post (ARIA's first property mixologist, 2014 Eater Young Guns winner). Studio Munge designed the room around the onyx bar; the rare-spirits inventory runs through 1930s Rémy Martin and 1950s Bacardi, with SevenRooms reservations required.
